Paleo Bagels



A tasty grain-free substitute for regular bagels are these Paleo bagels. Made with coconut flour and almond flour, they are satisfying and filling but still follow the Paleo diet.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup arrowroot powder
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 2 large eggs
  • 1/4 cup almond milk
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • Sesame seeds or poppy seeds optional, for topping

Instructions:

Preheat oven to 350F 175C

Line a baking sheet with parchment paper

In a mixing bowl, combine almond flour, coconut flour, arrowroot powder, baking powder, and sea salt

In a separate bowl, whisk together eggs, almond milk, honey, and apple cider vinegar

Gradually add wet ingredients to the dry ingredients, stirring until a dough forms

Divide the dough into 6 equal portions

Roll each portion into a ball and then shape into a bagel shape, poking a hole in the center

Place the formed bagels onto the prepared baking sheet

Optionally, sprinkle sesame seeds or poppy seeds on top of each bagel

Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through

Allow the bagels to cool slightly before serving

Enjoy with your favorite toppings!

Meyer Lemon and White Chocolate Biscotti



Delight in the delightful combination of zesty Meyer lemons and creamy white chocolate with these biscotti. Perfect for dipping in your favorite hot beverage!

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Zest of 2 Meyer lemons
  • 1/2 cup white chocolate chips
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

Warm the oven up to 350F 175C and put parchment paper on a baking sheet

Mix the flour, sugar, baking powder, salt, and Meyer lemon zest together in a bowl using a whisk

Add the white chocolate chips and mix them in

Beat the eggs and vanilla extract together in a different bowl until they are well mixed

Mix the dry ingredients with the wet ingredients little by little until a dough forms

On a floured surface, roll the dough into a log that is about 12 inches long

Put the log on the baking sheet that has been prepared and slightly flatten it

After the oven is hot, bake the log for 25 to 30 minutes, or until it is firm and slightly golden

Take it out of the oven and wait ten minutes

Bring the oven's temperature down to 325F 160C

Carefully cut the log into biscotti that are 1/2 inch thick across the diagonal with a sharp knife

Put the biscotti back on the baking sheet with the cut side facing down

Turn the biscotti over every 10 to 15 minutes for another 10 to 15 minutes, or until they are crisp and golden

Put them on a wire rack to cool down after taking them out of the oven

The biscotti are ready to eat once they have cooled down

Marbled Valentine Sugar Cookies

Ingredients:

Wrap the log in plastic wrap and chill in the refrigerator for at least 1 hour

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

Slice the chilled dough log into 1/4-inch rounds and place them on the prepared baking sheet

Bake for 10-12 minutes, or until the edges are lightly golden

Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

Chocolate Butter Pecan Bread Pudding

In a separate bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and a pinch of salt

Bake in the preheated oven for 45-50 minutes or until the pudding is set and the top is golden brown

While the bread pudding is baking, prepare the cream cheese glaze by mixing 4 oz of softened cream cheese with 1/2 cup of powdered sugar and 1 tsp of vanilla extract until smooth

Once the pudding is done, remove it from the oven and let it cool slightly

Drizzle the cream cheese glaze over the warm bread pudding

  • 2 oz peach vodka
  • 1 oz peach schnapps
  • 1 oz peach nectar

Instructions:

Put ice cubes in a cocktail shaker

Pick up some peach schnapps, peach nectar, simple syrup, and lemon juice and put them in a shaker

Good shaking for about 15 to 20 seconds, or until cold

Strain the drink into a martini glass that has been chilled

Put a mint sprig and a slice of peach on top

Bobby's Bourbon Maple-Glazed Doughnuts

Instructions:

In another bowl, combine the milk, eggs, bourbon, maple syrup, melted butter, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until a dough forms

Turn the dough onto a floured surface and roll it out to about 1/2-inch thickness

Use a doughnut cutter or a round cookie cutter to cut out doughnuts

Use a smaller cutter for the center holes

Heat the oil in a deep fryer or large pot to 350F 175C

Vanilla Rose Ice Cream

Oreo Sunflower Cupcakes



Not only are these Oreo Sunflower Cupcakes cute, they taste great too. They're great for garden parties, special events, or just when you want to send someone a tasty treat to make their day.

Ingredients:

  • 1 box of chocolate cupcake mix
  • 1 cup of water
  • 1/3 cup of vegetable oil
  • 3 eggs
  • 12 Oreo cookies
  • 1 cup of chocolate frosting
  • 1/2 cup of yellow frosting
  • 12 mini Oreo cookies
  • Green food coloring
  • 12 yellow mini M&M candies
  • 12 black decorating gel tubes

Instructions:

Follow the directions on the cupcake mix to get your oven ready

You can line a muffin tin with cupcake liners

Put the cupcake mix, water, vegetable oil, and eggs in a bowl and mix them together until the batter is smooth

About two thirds of the way to the top of each cupcake liner, fill it with batter

In the bottom of each cupcake liner, put an Oreo cookie

Put the cupcakes in an oven that has already been heated for the amount of time listed on the box of cupcake mix

This is usually between 18 and 20 minutes

After baking, put the cupcakes on a wire rack to cool all the way down

Get the sunflower decorations ready while the cupcakes cool

Add a few drops of green food coloring to the yellow frosting in a small bowl

This will make green frosting

Put a small round tip on a piping bag and pipe a ring of yellow frosting around the edge of each cupcake to look like sunflower petals

One mini Oreo cookie should be put in the middle of each cupcake to make the sunflower's center

Put a yellow mini M&M candy on top of the Oreo cookie to make the center of the sunflower

To make a sunflower seed pattern, use the black decorating gel tubes to draw lines from the middle of the sunflower to the edges of the petals

Do this again with each cupcake

Give the decorations some time to dry

Serve your tasty Oreo Sunflower Cupcakes and enjoy them!

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced

Remove chicken from skillet and set aside

In the same skillet, add carrots, celery, onion, and garlic

Cook until vegetables are tender, about 5-7 minutes

Stir in flour and cook for 1-2 minutes

Gradually add chicken broth and almond milk, stirring constantly until mixture thickens

Add peas, cooked chicken, dried thyme, salt, and pepper

Stir until well combined

Pour chicken mixture into a 9-inch pie dish

Unroll pie crust and place it over the chicken mixture, trimming any excess dough

Cut a few slits in the crust to allow steam to escape

Bake for 30-35 minutes, or until crust is golden brown and filling is bubbling

Let cool for a few minutes before serving
