Strawberries & Cream Poke Cake Parfait



Enjoy the layers of this strawberry and cream poke cake parfait, which has fresh strawberries, strawberry jam, a moist strawberry cake, and a delicious whipped cream topping. Adding crushed vanilla wafers gives it a satisfying crunch and makes it a great dessert for any event.

Ingredients:

  • 1 box strawberry cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup sliced fresh strawberries
  • 1 cup strawberry jam
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed vanilla wafers
  • Fresh mint leaves for garnish

Instructions:

Preheat the oven to 350F 175C

In a large bowl, combine the strawberry cake mix, water, vegetable oil, and eggs

Mix until well combined

Pour the batter into a greased 9x13-inch baking pan and bake according to the package instructions

Once the cake is baked and cooled, use the handle of a wooden spoon to poke holes all over the cake

Spread sliced strawberries evenly over the cake

In a small saucepan, heat the strawberry jam over low heat until it becomes pourable

Pour the jam over the strawberries, allowing it to fill the holes in the cake

In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form

Spread the whipped cream over the strawberry layer, creating a smooth surface

Sprinkle crushed vanilla wafers on top for added texture

Refrigerate the parfait for at least 2 hours to allow the flavors to meld

Garnish with fresh mint leaves before serving
