Ingredients:
- 1 box strawberry cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup sliced fresh strawberries
- 1 cup strawberry jam
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup crushed vanilla wafers
- Fresh mint leaves for garnish
Instructions:
Preheat the oven to 350F 175C
In a large bowl, combine the strawberry cake mix, water, vegetable oil, and eggs
Mix until well combined
Pour the batter into a greased 9x13-inch baking pan and bake according to the package instructions
Once the cake is baked and cooled, use the handle of a wooden spoon to poke holes all over the cake
Spread sliced strawberries evenly over the cake
In a small saucepan, heat the strawberry jam over low heat until it becomes pourable
Pour the jam over the strawberries, allowing it to fill the holes in the cake
In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form
Spread the whipped cream over the strawberry layer, creating a smooth surface
Sprinkle crushed vanilla wafers on top for added texture
Refrigerate the parfait for at least 2 hours to allow the flavors to meld
Garnish with fresh mint leaves before serving
