Ingredients:
- 4 cups of day-old bread cubes
- 1/2 cup of butter, melted
- 1/2 cup of pecans, chopped
- 1/2 cup of semi-sweet chocolate chips
- 4 large eggs
- 1 cup of milk
- 1 cup of heavy cream
- 1/2 cup of granulated sugar
- 1 tsp of vanilla extract
- 1/2 tsp of cinnamon
- Pinch of salt
Instructions:
Preheat your oven to 350F 175C
In a large mixing bowl, combine the melted butter and bread cubes
Toss to coat the bread cubes evenly
Sprinkle the chopped pecans and semi-sweet chocolate chips over the bread mixture and gently mix them in
In a separate bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and a pinch of salt
Pour the egg mixture over the bread mixture, making sure all the bread cubes are soaked
Transfer the mixture to a greased baking dish
Bake in the preheated oven for 45-50 minutes or until the pudding is set and the top is golden brown
While the bread pudding is baking, prepare the cream cheese glaze by mixing 4 oz of softened cream cheese with 1/2 cup of powdered sugar and 1 tsp of vanilla extract until smooth
Once the pudding is done, remove it from the oven and let it cool slightly
Drizzle the cream cheese glaze over the warm bread pudding
Serve the chocolate butter pecan bread pudding warm and enjoy!
