Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Food coloring red and white
Instructions:
In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
In a separate bowl, whisk together the flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Divide the dough into two equal portions
Color one portion with red food coloring, kneading until the color is fully incorporated
Leave the other portion uncolored
Roll out each portion of dough into a rectangle of equal size, about 1/4 inch thick
Place one rectangle of dough on top of the other
Gently roll the dough layers together into a log, creating a marbled effect
Wrap the log in plastic wrap and chill in the refrigerator for at least 1 hour
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Slice the chilled dough log into 1/4-inch rounds and place them on the prepared baking sheet
Bake for 10-12 minutes, or until the edges are lightly golden
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
