Ingredients:
- 1 baguette
- 2 eggs
- 2 tablespoons mayonnaise
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 carrot, julienned
- 1 cucumber, thinly sliced
- Handful of cilantro leaves
- Handful of pickled daikon and carrot optional
- Sriracha or chili sauce optional
Instructions:
Slice the baguette horizontally, leaving one side intact
In a small bowl, mix soy sauce, rice vinegar, and sugar
Set aside
Heat a skillet over medium heat and fry eggs to desired doneness
Spread mayonnaise on one side of the baguette and drizzle the soy sauce mixture on the other side
Place fried eggs on the bottom half of the baguette
Layer with julienned carrot, sliced cucumber, cilantro leaves, and pickled daikon and carrot
Drizzle with Sriracha or chili sauce if desired
