A tasty and colorful three-color pasta salad made with fresh veggies, mozzarella, and Italian dressing. It's great for potlucks, picnics, or just as a cool side dish!
Ingredients:
- 1 lb tri-color rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella balls, halved
- 1/2 cup black olives, sliced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil leaves, chopped
- 1/3 cup Italian dressing
- Salt and black pepper to taste
Instructions:
Cook the tri-color rotini pasta according to package instructions until al dente
Drain the pasta and rinse under cold water to stop the cooking process
Let it cool completely
In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, black olives, red bell pepper, red onion, and fresh basil
Pour Italian dressing over the salad and toss until everything is evenly coated
Season with salt and black pepper to taste
Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld together
Serve chilled and enjoy!
