The grilled lamb chops in this recipe go well with a rich red wine sauce made with Freak Show Cabernet Sauvignon. It was a memorable meal because the strong flavors of the wine went so well with the salty lamb.
Ingredients:
- 4 lamb chops
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup red wine preferably Freak Show Cabernet Sauvignon
- 1/2 cup beef broth
- 2 tablespoons butter
- 1 tablespoon chopped fresh parsley
Instructions:
Preheat your grill or grill pan to medium-high heat
Rub lamb chops with olive oil, minced garlic, dried rosemary, salt, and pepper
Grill lamb chops for 4-5 minutes on each side for medium-rare, or until desired doneness
Remove lamb chops from the grill and let them rest for a few minutes
In a small saucepan, combine red wine and beef broth
Bring to a simmer over medium heat
Simmer until the liquid is reduced by half, about 8-10 minutes
Stir in butter until melted and sauce is slightly thickened
Serve grilled lamb chops drizzled with the red wine sauce, and garnish with chopped parsley
